INGREDIENTS: 4 artichokes – 1 garlic clove – pecorino (half matured) – 1 lemon – 1 chilli – salt – pepper – extra virgin olive oil – fresh parsley.
PREPARATION: 1. Clean the artichokes; 2. Slice them finely and put them for half an hour in water acidulated with lemon juice; 3. Finely chop the garlic clove and more coarsely chop the parsley; 4. Remove the artichokes from the water and squeeze them slightly; 5. Place the artichoke fillets in a bowl and season with garlic, parsley, salt, pepper and olive oil; 6. Slice the pecorino cheese and slice the chilli pepper; 7. Compose the dish.
